THAI SPICED PEANUT SAUCE

INGREDIENTS
1 cup unsalted roasted peanuts
1/3 cup water
2 cloves of garlic
1/2 tsp dark soy sauce
2 tsp sesame oil
1 and 1/2 tbsp brown sugar
2 tbsp fish sauce
1/2 tsp tamarind paste
1 tsp Thai chilli sauce (or 1/2 tsp cayenne pepper)
1/3 cup coconut milk

HOW TO MAKE?
1. Add all the ingredients into your food processor or blender. You can also use a mortar, if you have a big one at home.
2. Blend everything until you’ll get a smooth sauce, without any chunky bits in it.
3. Now time to taste it. If it’s not salty enough – add more fish sauce. Not spicy enough – add chilli sauce or cayenne pepper.
4. Should be served at room temperature or even warm. You can freeze it, if you happened to make too much of it. You can store it in the fridge for up to two weeks.
